Description
Vivification:
Grapes were harvested from 26 Feb 2010 - 10 March 2010 at 21.6 - 23.4 °Brix. 2 - 4 hours of skin contact allowed in the press before pressing to 1.6 bars of pressure. The juice was allowed to settle for 30 hours at 6 - 9°C before racking. Fermentation took place at between 11- 14°C and the wine was left on the lees for 32 weeks. A range of yeasts were use on the grape clones from the different vineyards.

18 December 2010.
Tasting notes:
Hints of grapefruit, Granny Smith apple, melon, gooseberry and wisps of green fig. The wine offers a flinty minerality with a creamy rounded mouth feel.

Residual sugar: 4.0 g/l
pH: 3.31
Free sulphur: 23 mg/l
